Flywheel slicer Berkel Model 7

The flywheel slicer Berkel Model 7 was produced between 1922 and 1928, at the same time of model 5. The mechanics of this flywheel slicer is identical to model Berkel 3 and 5.  The base, instead has born some modifications : its dimensions were indeed increased in height. Also, the fixing clamp for the product to be sliced, with Berkel model 7 with pedestal,  has an interlocking fixing inside the scroll carriage.

Such model is flywheel slicer with a sharpener covered by a painted crown. The machine relieves a particular system which was first adopted in 1908 by the professional Berkel slicer model 2. : the closed flywheel – with marks in relief – operates the gears system situated under the base – which in turn – generates through a chain the blade movement and by means of two connecting-rods also the scroll carriage. This flywheel slicer has got a scroll carriage at the close blade which scrolls inside a pivot.

On the opposite side of it instead, there is a squared bar working through a scrolling felt. The two guides are supported by four little columns – tow per each  – which are fixed on the base.

In flywheel slicer Berkel model 7 is also a dial graduated knob for the slice thickness regulation, fixed on the machine base. The graduated knob operates a peck-shaped lever situated on axle of the toothed wheel, which is visible of the carriage of slicer Berkel Model 7 with pedestal. The toothed wheel, in turn, will exert the movement to the worm screw in which the machine clamp comb lies into thus generating the slicing movement. In this manual slicer the toothed wheel is linked to the lever, which hand orientated in the two directions, moves the clamp right or left depending on the need. The hub which supports the blade is fixed in the machine shoulder, which at its external side appears flattened performing a winged-shape bow. This allows the extension of the machine tray, that means a greater surface space during the use of this flywheel slicer.
