HISTORICAL NOTES

Berkel Model NL, precedes model 9H. It’s a professional slicer with contained dimensions with excellent mechanical skills and slicing efficiency. It’s a closed smooth manual slicer type. This last one will activate the gears assembly placed under the machine base which in turn will generate the blade movement  – through a chain – and the scrolling carriage  – by means of two connecting-rods. This flywheel slicer carriage moves upon some driven wheels through a binary present at the machine base. Model NL with pedestal is provided with a graduated rod for the slice thickness regulation  – fixed on the machine base  – which operates the peck-shaped lever. This last one is placed on the axle of pinion cog wheel present on the machine carriage.

The cog wheel will then exert the movement to the worm screw where the clamp comb is into, which generates slicing movement.

In Berkel model NL, such system is at sight as per models 5 and 7.  Being it a manual slicer, the cog wheel is linked to a lever. Once hand-operated it in the two directions, it will move the clamp right or left depending on the need. This is a machine with a reduced sharpener, covered by a crown of metal. The machine shoulder – where the blade hub is fixed into – is externally flattened performing a wing-shaped bow. This will allow to extend the machine tray during the use of such professional slicer, thus gaining a wider working surface.
